Here's my recipe for the day: EDAMAME SALAD

  • I don't use measuring cups, so adjust to your taste.

    1 bag of shelled edamame
    1 can of corn
    1 small red onion
    1 small yellow bell pepper
    1 small orange bell pepper
    1 bunch of cilantro (optional)
    a couple splashes of white balsamic vinegar
    a couple splashes of olive oil or flaxseed oil
    salt and pepper to taste

    Mix together and enjoy.

    You can use regular or red bell pepper, if you like. I used yellow and orange to make it more colorful. Use other veggies and/or beans if you like - tomatoes, black beans, cannellini.

    White wine vinegar if you can't find white balsamic vinegar (available at Trader Joes). Not a fan of vinegar? Use lemon juice instead.

  • Angela, edamame is soy. It looks like sugar snap peas, but you don't eat the pods. The first time I had it was at a sushi bar where they put a big bowl of it on the counter. You squeeze the pods to pop the seeds into your mouth.

    You can buy them in bags in the frozen food section of Trader Joes. I get the kind that is fully cooked and salted. I grab few handfuls in the morning, stuff them in a baggy and take them to work. In the afternoon, they've thawed and I have something to nibble on.

  • Costco sells their mondo-sized bag of edamame too. It's a great snack, but for this salad it's definitely better to buy the pre-shelled ones!
