Recipe of the Day: Luncheon Chicken Salad

  • I know I've posted this before, but I forgot about it until today. Think I'll make it next week!

    Luncheon Chicken Salad

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    4 cups cooked chicken breast -- cubed
    20 ounces pineapple tidbits -- drained
    11 ounces mandarin oranges -- drained
    1 cup celery -- chopped
    6 green onions -- chopped
    1/2 cup green pepper -- chopped
    2/3 cup fat-free mayonnaise
    7 1/2 teaspoons brown mustard
    1 tablespoon brown sugar substitute
    1/2 teaspoon minced garlic

    Stir together chicken, pineapple, oranges, celery, green onions, and green pepper.

    In a separate bowl, combine remaining ingredients.

    Combine with chicken mixture.

    Chill and serve. (It's good warm too.)

    NOTES : You can substitute finely chopped red onions for the green, and/or yellow mustard for the brown if desired.
  • Oh wow, this is one of my favorites! Now how did I ever miss the mandarin oranges in the first go-round? I've been making a modified version (actually just adding pineapple when I make tuna or chicken salad) but I think I should make this exact salad by the exact recipe this weekend. It would be a good thing to divide into containers for 2-3 days worth of lunch!!
  • I know this is on the core board, but how many servings and pts would this be? It certainly sounds delish!! I might just add some curry powder to it also.
