Thai Shrimp and Noodle Salad
Serving Size : 1 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup broccoli florets 1/4 cup sweet red pepper -- chopped 2 tablespoons teriyaki sauce 1 tablespoon soy sauce 1 tablespoon fresh lime juice 1 tablespoon fresh basil -- chopped 4 ounces cooked shrimp 1 cup cooked whole wheat spaghetti Fill a med saucepan with water. Bring to a boil. Add broccoli and peppers. When water returns to a boil, remove pan from heat, drain and refresh vegetables under cold water. Combine teriyaki sauce, soy sauce, lime juice, basil and cilantro together in small bowl. Combine vegetables, shrimp and spaghetti in a large bowl and toss with dressing till well coated. Notice that it only serves 1, so you'll have to multiply it to feed others. I may use whole wheat angel hair pasta instead, if I can find it. |

Wow! Now that I've fallen in love with whole wheat spaghett, this is my kind of dish. I'm going to definitely be trying this!

I just put it together for this evening, and it looks pretty yummy. I didn't have fresh basil, so I used dried, but I think it'll be OK.
I'll let you all know how it tastes (after weigh-in!) :lol: Angela |
So I tasted it - it's pretty yummy. I think it would be better with fresh basil, but it was still good with the dried. I don't know if it's supposed to be served warm or cold. I had it cold...
