1 pound green beans, trimmed
2 oz. feta cheese, crumbled 10 large basil leaves, chopped 1/2 teaspoon Dijon mustard 1 tbls. red wine vinegar 3 tbls. olive oil salt and freshly ground pepper to taste Steam the green beans in a steamer until tender.Place in a bowl with the feta cheese and basil. Whisk the Dijon mustard, vinegar, oil, salt and pepper in a small bowl. Pour over the green bean mixture and toss. ENJOY! Elizabeth |

You could substitute spinach or chard but would need a lot more since 10 oz of spinach cooks down to about 2 servings. I think this recipe would serve 4.
Most people use www.fitday.com to calculate nutritional values of their recipes. Spinach and chard are zero countable carbs. |
