Summer Squash Recipe (hot and sweet)

  • 6 yellow summer squash, cleaned and sliced 1/4 inch thick
    1 stick unsalted butter, melted
    1/8 tsp Stevia Concentrate Dark Liquid
    1/2 tsp fresh ground ginger root
    1/2 tsp salt
    1/4 tsp ground cayenne (red) pepper

    Place squash in 9 or 10 in pyrex dish. Whip butter, sugar, salt, pepper and ginger until well blended. Drizzle butter mixture over squash. Cover dish and bake at 350° F. for 1 hour.

    Serving size: 1 cup
