* Exported from MasterCook * Grilled Vegetables - 1 or 2 Points Recipe By :George Foreman Serving Size : 4 Preparation Time :0:00 Categories : Bbq & Grilling Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 whole eggplant -- sliced into 6 (1/2") thick slices 2 small onions -- sliced 1/2" thick 2 small tomatoes -- diced 2 small zucchini -- sliced 4 large cloves garlic -- peeled and sliced 4 whole mushrooms -- (4 to 6) sliced 1 teaspoon olive oil -- (optional) 1. Preheat the GRILLING MACHINE for 3 to 5 minutes. At this time, also spread on olive oil if desired. 2. Add the sliced eggplant and garlic, cover and cook 3 minutes. 3. Add the slices of onion, zucchini and mushrooms. Cover and cook 3 minutes. 4. Remove the eggplant and zucchini and mushroom slices to a plate. 5. Add tomatoes to the onion and garlic. Cover and cook for one minute. 6. Remove and serve over the eggplant, zucchini and mushrooms. Yield: 2-4 servings. Serve as an accompaniment to meat and pasta. Or stuff them into a piece of pita bread for a grilled vegetable sandwich.
