This side dish is absolutely delish... It's perfect to bring along to a summer pot luck or BBQ.
It's one of those dishes that should be eaten in on rare occassions during Phase 2 however, due to the raisins and the higher than desirable fat content.
Ingredients:
2 Medium to Large broccoli heads washed and drained, trimmed, use florets only no stems
1/2 cup red onion, chopped
1/2 cup golden raisins
1/2 cup pecans, chopped
6 strips Turkey bacon, fried crisp and crumbled
3 tablespoons red wine vinegar
½ to 3/4 cup Mayonnaise (made w/Canola or Olive Oil)
½ to 3/4 cup Light or NF Sour Cream
1/4 cup Spoonable Splenda
1 Cup 2% cheddar shredded
Directions
In a large bowl, combine the broccoli florets, onions, raisins, pecans and
bacon. In a small bowl, combine the dressing ingredients, the vinegar,
mayonnaise and sugar. Mix well and pour over broccoli mixture. Toss gently,
refrigerate, covered, overnight and toss gently the next day when ready to
serve.
