dirty rice

  • bake brown rice as per instructions here or you can use steamed basmanti rice.

    I always use a non stick frying pan for easy clean up.

    saute either a small onion or shallot in teaspoon of olive oil.

    Add rice and a bit more olive oil, mix well.

    add about 2 tablespoons of light soy or until your rice changes to a darker colour.

    Sprinkle 1/2 of toasted chopped nuts (almonds, walnuts pecans).

    mix well.

    only way I use to get my kids to eat rice.

  • Chelby is right. What we Southerners refer to as "dirty rice" is way different than the recipe you listed (although yours DOES sound good). Dirty rice has all kinds of cajun spices and usually includes meat and lots of other good stuff (peppers, onions, etc.).
  • Here's a dirty rice recipe that is phase 2 friendly.

    1 lb ground beef
    4 cups uncooked rice (brown)
    garlic pepper
    cajun spice
    seasoned salt
    2 bunches of green onions
    2 lg bell peppers
    2T olive oil

    1. Brown ground beef, do not drain. Add 2 tablespoons of oil.

    2. Add sliced green onions and bell peppers to ground beef, add spices to taste. Allow to simmer until onions and peppers are soft.

    3. Last, add rice to pan and let simmer till rice is done.
