Spinach and Bulgur Warm Salad

  • I had almost Nothing in the Fridge/Pantry! So I whipped this up with 1 quickie item from the store
    1 box Near East Bulgur Pilaf
    1 cup walnuts
    2+ cups frozen leaf Spinach (it makes 2 cups cooked)
    cooking Spray
    1/8-1/4 cup parmesan cheese
    Make Pilaf per instructions I used Olive oil instead of butter
    While the Bulgur Simmers
    Toast cup of Walnuts in skillet medium High 2 minutes or until fragrant
    set aside In same skillet spray with Cooking spray and sautee Frozen spinach till cooked through (its 2 batches) toss with Walnuts
    When Pilaf is done Toss spinach and walnut mixture in and sprinkle with Parmesan to taste
    should make 6 servings easily or 4 if you have a super hungry significant Other
    So good and Pretty!
