Yummy Green Beans!
I have made these for years and they are a family favorite with everyone in my family asking me to bring them on Thanksgiving, birthdays, potlucks etc. I tweaked the recipe for South Beach and this is what I came up with:
Fresh Green beans (I usually make about 1 lb) cut off ends, wash and cut into bite sized pieces, rinse and drain One large onion, diced 2-3 cloves garlic, diced 8 pieces of turkey bacon, diced (I have made this twice, once with 4 pieces of turkey bacon and once with 8) 1 tbls. olive oil salt, pepper, seasonings to your liking In a large skillet, heat olive oil. Add onion, turkey bacon and garlic. Stir and cook until onion is almost translucent. Add green beans to skillet, stir into other ingred., add any spices you desire at this time also. I don't add salt, but my daughter does when she makes this. Cover with water to about 1/2" to 1" depth. Put lid on pan and cook until green beans are done to your liking (about 10-15 min.) I serve these in a bowl, with a spoon as I also like the "juice" that is left from cooking them. They are a good alternative to green bean casserole on thanksgiving. Last Thanksgiving I made both green bean dishes. All of the fresh green beans got eaten and 1/2 of the green bean casserole was left at the end of the meal! :) |
