Really good and easy substitute for cornbread
i wasn't sure where this recipe should go so i am putting it here. Hope that's okay. this is a really good substitute for cornbread. It doesn't sound very good but it really is. I also add splenda/agave/unsweetened cocoa powder to make a dessert. it is also really good to leave out the baking powder and microwave a little less and it is really gooey. i serve with lite cool whip. :)
Ingredients 3 1/2 ounces ground almonds or almond flour 1 ounce i can't bekieve its not butter 2 large eggs 1/2 teaspoon baking powder 1/4 teaspoon salt Directions 1In a small bowl, mix wet ingredients, then work in the dry ingredients. 2Pour into a greased microwave-safe container (about 6-inch square, or thereabouts). 3Microwave for 2 minutes . 4Cut into 8 slices 5Serve with i can't believe its not butter. |
Can you bake this in the oven in a cast iron pan?

i'm not sure. i would guess so, i have only made it in the microwave, which is seemingly gross but actually delish!

is there another type of flour that can be used ? I'm allertgic to almonds. Maybe Chickpea flour?

Sorry but bean flours are not allowed in Phase I - they have a high GI.

and chick pea flour would turn out 100% different but may jut be good!

Cornbread substitute
I am assuming that if I wanted I could use melted butter (I know--higher calories)? I may want to try this as the base for my dressing recipe.

This is the South Beach forum so butter is not on the allowed foods list. Obviously if you are following a different plan you should go ahead and modify as needed :)
