extremely firm tofu?

  • I've been buying a smoked tofu made by Wildwood Natural Foods. It's soooooo gooooood! One thing I like about it is it's so extremely firm and does not resemble tofu at all. It's like a block of cold cheddar cheese.

    I bought extra firm tofu and tried pressing it (all day) but it was still kind of spongy in texture. I'm new to tofu, so there is probably something I don't know. Does anyone know the trick to getting an extra firm block?

    You know what I read and i have tried is you freeze tofu and then defrost it before you use it. A lot of the water is leeched out and it gets more of a meaty texture.
  • Suzanne, was your tofu silken? Anything for me that comes from a carton is squishy. They sell large blocks of plain, firm tofu (shaped like Velveeta) at Greenlife Grocery. I might be going tomorrow - if I buy us both a block, will you smoke one for me?
