I've been buying a smoked tofu made by Wildwood Natural Foods. It's soooooo gooooood! One thing I like about it is it's so extremely firm and does not resemble tofu at all. It's like a block of cold cheddar cheese.
I bought extra firm tofu and tried pressing it (all day) but it was still kind of spongy in texture. I'm new to tofu, so there is probably something I don't know. Does anyone know the trick to getting an extra firm block?
