I much prefer the low-fat cottage cheese too, and I add a spoonful of DH's full fat yogurt. I eat it most days with fruit, though sometimes I make pancakes. I use a simple recipe for one -
1/3 cup cottage cheese
1/3 cup egg whites (3 usually)
1/3 cup uncooked oatmeal (not instant)
Blend and thin with water until it's the consistency you like. I much prefer thin pancakes, and I usually get 2-3 pancakes out of this. Makes it seem like more that way too.
I often used unsweetened applesauce as a topping.
