Egg White Potato Latkes

  • 5 egg whites
    1-6 ounce russet potato
    ¼ cup chopped yellow onion
    salt and pepper
    garlic powder
    pinch of baking powder
    1 teaspoon dried parsley
    Pam cooking spray
    Place all ingredients in a food processor. Note: use salt, pepper and garlic to taste. Spray a Teflon pan with cooking spray and preheat pan over medium heat. Place a heaping tablespoon of mixture in pan and cook until browned. Flip over and cook until browned. Serves 1
    Bake for 10 minutes, or until golden brown on the bottom. Turn latkes over, switch position of baking sheets, and bake about 5 more minutes, or until golden brown.
    Transfer to a plate, arranging browned-side up, and serve with no-fat sour cream or applesauce, or both.
