Luv those veggies!

  • This thread is to discuss various types of vegetables and how to prepare them.

    I love fresh vegetables but sometimes I am too busy (or lazy) to go to the store. A good standby for me are the frozen Kirkland stir fry vegetables from Costco. I luv them. In a very large bag you can find:

    broccoli, sugar snap peas, baby corn, mukamame (shelled edamame), carrots, portabella mushrooms, water chestnuts, red bell pepper, yellow bell pepper, shitake mushrooms, and green onions

    The whole combination is not only delicious but colorful and wow what a variety of flavors and textures.

    This is what I had for dinner tonight. I just stir fried some in olive oil, added a little hot pepper oil, some peanuts, crushed nori and then topped it off with a litte basalmic vinagrette. YUM YUM. Sorry.. I ate it all. None to share with you.

    I regularly rotate portions of salad, steamed vegetables, roasted vegetables, and stir-fried vegetables through our daily diet. My favorite are vegetables (zucchini, mushrooms, onion, eggplant, garlic, etc.) marinated in balsamic vinegar and olive oil and roasted. Yum. It also makes the house smell great for hours!
  • You know I am amazed I never thought of the balsamic vinegar to marinate veggies as I LOVE the stuff and do use olive oil. Yum yum, thanks... now I have something new to jazz them up!!!
  • Another favorite roasted-vegetable combination of mine is tomatoes, asparagus, and cubed winter squash (tossed in olive oil, sprinkled with pepper, roasted). Yummmmm

    Sounds yummy. Could you give me a few more specifics. Tomatoes with skin?... about how long would you roast this with squash?
  • I don't think I have actually ever bought any squash... not sure I like it but perhaps a good try. Bet the tomatoes and asparagus would also be good roasted with a sweet potato. I love sweet potatoes (the light ones, not yams) chopped and baked with a bit of olive oil and covered with fresh salsa and onions baked on them.
