  • Hi guys,
    My name is aphil, a long time dieter, but kindof new to this website. I am 25 years old and a long time struggler with my weight. I have always had to watch everything I ate to stay at a decent weight. I usually keep it under control, but have just had a baby a couple months ago, so I am trying to lose the pregnancy weight. (I have went from 195 to 190 so far.)
    I love food and love to eat- hope you will like these recipes!

    PUMPKIN BLUEBERRY MUFFINS
    2 1/2 c. flour
    2 c. sugar
    1 T. pumpkin pie spice
    1 t. baking soda
    1/2 t. salt
    1 1/4 c. canned pumpkin
    2 eggs
    1/4 c. oil
    1 c. fresh or frozen blueberries
    topping:mix 1/4 c. sugar, 2 T. flour, 1/2 t. cinnamon,and 2 T. margerine-cut with a fork until crumbly.

    grease or line 24 muffin cups and preheat oven to 350 degrees.
    Combine flour, sugar, spice, soda and salt ina bowl. Combine pumpkin, eggs, and oil in another bowl. Stir dry mix with wet until moistened.Gently fold in berries.Fill cups 2/3 full and sprinkle with topping. Bake 25-30 minutes.

    LOWFAT LEMONADE MOUSSE
    1c. graham cracker crumbs
    1 T. sugar
    1 T. light margerine-not fat free! melted
    1-14 oz. can fat free sweetened condensed milk
    3/4 c. frozen lemonade concentrate (6 oz.)
    2 c. cool whip light
    with fork, combine crumbs, sugar, and margerine.press into 13x9 pan.
    Mix milk and lemonade in bowl. Fold in cool whip. Pour over crust. Chill overnight.Cut into 12 servings.

    Hello again!
    I am adding two new recipes, I hope you enjoyed the last ones, and will try these! I welcome any feedback on how you liked them!
    BANANA DATE BREAD
    1/2 c. vanilla nonfat yogurt
    3 egg whites
    3 mashed ripe bananas
    1 T. molasses
    1 c. sugar
    1 c. flour
    1 c. whole wheat flour
    1 t. baking powder
    1 t. baking soda
    1 c. chopped dates

    Heat oven to 350
    Spray loaf pan with cooking spray.
    Beat yogurt,whites,banana and molassesin large bowl. Stir in rest of ingredients until moistened.Spread in pan. Bake about 35 min. or until toothpick inserted in center comes out clean. Cool 5 minutes;loosen sides and remove from pan.Cool completely before slicing.Cut into 12 slices. Store at room temp. covered.

    MOCHA BREAKFAST SHAKE

    1 banana
    1 c. skim milk
    1 T. sugar
    2 t. cocoa powder
    1 t. instant coffee
    1/2 t. vanilla
    3-4 ice cubes
    place all ingredients except ice in blender. Blend until smooth. Add ice cubes. Cover and blend until frothy.
    1 large serving!

    I love this one! I use it as a breakfast drink-combines a dairy and a fruit serving, as well as a coffee pick-me-up! Let me know what you think!

  • Hi, here are some new recipes!

    GINGERBREAD
    2 cups flour
    2 T. +2 t. brown sugar
    1 T. ground ginger
    1 t. ground cloves
    2 t. baking soda
    1/2 t. salt
    1/3 cup molasses
    1 egg, beaten
    1 c. boiling apple cider

    preheat oven to 350

    spray 8" square pan with Pam spray

    In large bowl combine flour, sugar, soda, salt, and spices. In small bowl, mix together egg and molasses-then mix in cider.
    Stir into flour mixture, do not overblend-just until moistened. Pour into pan, and bake for 20-25 minutes, or until toothpick in center comes out clean.

    CAPPUCHINO SMOOTHIE
    1 vanilla weight loss shake
    1 t. instant coffee crystals
    1 packet Swet n Low or Equal
    2-3 ice cubes

    Mix well in blender-nutrition content same as shake alone.
