Oh my...you must try it!!!! SO GOOD. One of my favorite core recipes. Vickie has a really great recipe posted, but I'm very lazy and don't go through all of the steps that she does. I'm sure her way is better, but I'll summarize what I do. Take chicken tenders (or cut up chicken breasts) and dredge them in cornmeal seasoned however you like (I use seasoned salt most of the time). Then pan-fry in olive oil. It takes a little while to brown well (the first time I made them I moved them around too much so they didn't get very crispy but were good anyway) but just let them cook awhile on each side. It is an excellent way to eat chicken, and is almost like eating out.
Wow, that was a long post. But Vickie's recipe is posted on our menu thread. I think there might be another one there too.
Melissa, I couldn't find the recipe either this morning. It's truly wonderful. I'm enjoying it so much that I might make another one soon. It's SO easy. I even use it for snacks during the day. It's a veggie and a milk for goodness sakes! Here's the link, GF.
I never heard of Wasa cracker but I looked them up and they aren't Core. I'm not surprised because I would have tried them if there was a Core cracker out there! I should have looked at the points but I was busy looking for the check mark.
b: coco wheats, milk
s: applesauce
l: Core sloppy joe over a baked potato, green pepper strips, milk
s: low fat graham crackers (pts)
d: big chef salad w/ff cheese, boiled egg & turkey ham, milk
Thanks Vickie! You are so helpful as usual!! I didn't think the wasa crackers were core, like you I'm sure I would have eaten them by now. But I think they are really low in points.
