1/2 cup shredded carrots
1/4 cup chopped onion
1/4 cup celery -- diagonally sliced
2 teaspoons margarine
1 cup low-sodium chicken broth
1 1/2 ounces egg noodles -- med or thin uncooked
In 2 quart microwavable casserole combine carrot, onion, celery, and
margarine; cover and microwave on high for 1 minute. Add broth and 1/2
cup of water and stir to combine. Cover and microwave on high for 5
minutes. Stir in noodles; cover and microwave on medium for 3 minutes,
stirring every minute. Let stand for 2 minutes, until noodles are
softened.
