Chili

  • I have a question. Does anyone have a low-carb (VERY low carb) chili recipe?

    My normal recipe that I've made pre-Atkins was:
    tomato juice, noodles, kidney beans,onions, peppers, hamburger, seasonings.

    I know on induction you can't have kidney beans and of course no noodles whatsoever...but what I use shouldn't be tremendously high carb should it? And I LOVE kidney beans so eventually that'll be one of the things I'm adding back to my menu

    but for now...I need to see if I can eat this. Anyone have a clue? Or a recipe they use for low-carb (oh, I know Atkins has one but it's just not the same) chili????

  • Why yes I do!

    I wish I could make it even lower but it's not so bad.........

    3/4 pound ground beef
    1/2 cup onion, diced
    2 tablespoons vegetable oil
    1/2 teaspoon pepper
    1/2 teaspoon kosher salt
    3 cloves garlic
    1/2 cup beef broth
    14 1/2 ounces canned tomatoes with green chiles
    3 tablespoons chili powder

    ok, now for the "little of this and little of that" stuff.......you can use cubed beef if you would rather, you can use more or less garlic and the chili powder is up to you. I also sometimes add some cumin.

    The totals are for 6 servings....which I think is VERY small:
    Adjust accordingly if you have less servings like me!

    Calories: 251
    Fat: 20 grams
    Total Carbs: 7
    Fiber: 2
    Protein: 12

    Not one of my lowest recipes but hey....sometimes I just want chili!
  • of course. What's chli w/out cheese??? And I hear you on the wanting chili. I smelled that yesterday and almost took the kidney beans and noodles out and had myself a bowl
