I few questions

  • I have not purchased the updated Carbs book yet but I read that you can drink skim milk in phase one. Is that true? How much?

    I have never really been that much a milk drinker but I made the Decadent Brownies Last night and I NEEDED milk.

    BTW - my brownies were "wet" - not goo-y but wet. Did that happen to anyone else? Should I have cooked them longer? Baking is not my forte anyway and now with new recipes and ingredients...

    My husband is doing SB with me and we are doing pretty well. I have enjoyed eating more meals with him (since he can't eat out!).

  • I guess I need the updated book. I didn't realize you could have milk on Phase I. It's nice that your DH is joining you on The Beach.

    Here's the most curent info I have on Phase I - from the revised edition
    DAIRY
    Fat Free 1/2 & 1/2, Nonfat milk, 1% milk, Soy milk allowed with coffee. Otherwise avoid all other dairy products (unless listed under protein choices or sweet treats). Limit to < 2 TBS per cup of coffee. Otherwise, avoid all milk products in Phase 1, including:
    Yogurt, cup-style and frozen
    Ice cream
    Milk, low-fat, fat-free, whole
    Milk, soy

    Hey...I didn't know you could have brownies in Phase 1! Where is this information, I am obviously missing out.

    Tell me I haven't wrecked this hard work. Here is the recipe:

    DECADENT FUDGE BROWNIES – Phase 1 and 2
    4 grams carbs per serving

    1/2 cup unsweetened cocoa powder
    1/2 cup ground pecans
    2 sticks butter (I Can't Believe It's Not Butter or Smart Spread)
    20 - 25 packets Splenda (1 C Splenda)
    4 eggs, lightly beaten

    Preheat oven to 375
    Melt butter
    Mix in cocoa, nuts, Splenda, & eggs
    Pour into buttered 8" or 9" square pan
    Bake for 25 - 30 minutes
    Allow to cool for 10 minutes or so
    Serve with fat-free whipped cream, if desired

    My husband called it a souflee. Tough to actually call them brownies. But they were pretty good with the whipped cream.

    I probably won't make them again because portion control is always my issue. If it's there I'll keep going.

    I wrote about this , I think it was yesterday< in one of the posts.....
    But for those of you who didn't read it....here goes again:

    In the new book by Dr. A, called The South Beach Diet Good Fats Good Carbs Guide, he lists under "Dairy" for Phase 1, the following:
    Low-fat or fat-free milk or soy milk
    Plain or sugar-free low-fat or fat-free yogurt

    These are among the "Foods To Enjoy."

  • I think I know why the brownies were gooey. The recipe calls for:

    2 sticks butter (I Can't Believe It's Not Butter or Smart Spread)


    Butter won't equal the consistency of the ICBINB or the Smart Spread. They are two different compositions, and will not cook the same. It looks like a low carb recipe that has been converted to SBD, which doesn't always work.
  • Ok, I found it, this is a low carb recipe that has been converted. If you used an SBD legal butter substitute, such as the ones listed on the recipe, it won't work as good as the original:

  • question about statring phase 1
    I just bought the book and want to start phase 1. Do you have to stick to the menus provided or can you choose from any of the "good" foods list as long as you avoid the no no's for the 1st 2 weeks.

  • Osborne60, the menus are simply suggestions. I never use them. Welcome to the Beach, by the way. There's lots of support here.
    By the way, next time you have a question, feel free to start a brand new thread. Sometimes new folks' questions get lost in other posts.
