Cabbage soup

    1/2 head cabbage, chopped small
    1 yellow onion, chopped small
    1 clove garlic, minced
    2 tbsp butter
    2 cups water
    1 cup chicken broth
    1/2 cup shredded cheddar
    black pepper to taste

    Saute the onion in butter in a big soup pan. After about 5 minutes,
    add the cabbage and garlic and saute as well. When softened, add
    water and broth, simmer for 30 mins. Add pepper and then right before
    serving toss in the cheddar. Stir to melt it (will be brothy) then
    serve with low carb bread or crackers. I think the total carb count
    is 12 and it serves between 3 and 4 servings so 3.5 carbs per bowl.
