Cheesecake

  • I posted this in the daily thread but will repeat it here for those who missed it.

    3 lb ricotta cheese (I used half cottage cheese for creamier texture)
    8 eggs
    1 cup Splenda
    Vanilla or other flavoring to taste (try lemon & grated peel)
    Blend until very smooth.
    Pour into container sprayed with Pam. You could use a pie dish or muffin size (adjust cooking time)
    Bake at 350 about 20 minutes or until set.
    Cool in turned off oven and then chill in fridge.

    Makes a luscious dessert or even breakfast. In phase 2 you could use some berries as a topping. Yummy.
  • I didn't like this at all.. it looked wonderful and smelled even better but.. i couldn't get one bite totally down.. more the texture than the taste. but both equally not appealing.
