  • I haven't posted a menu in a bit. I did fairly well at restaurants while I was on vacation, but nothing to post about. When I came back I had a bit of a meltdown, but right back on track.

    Phase 1, alternative products

    L - Rainbow Smiles' Avgolemono soup with 1.5 cups grated cauliflower, free arugula salad with WF vinaigrette

    The brownie is actually an IP product -- Double Chocolate brownie.

    The wildberry muffin recipe is as follows:

    -1 Package of Ideal Protein Crispy Cereal (crunched into crumbs)
    - 1 Package of Ideal Protein Wildberry Yogurt Drink Mix
    - 2 Egg Whites, beaten slightly
    - 1 Tablespoon Splenda/Stevia
    - 1 Teas of Baking Powder

    Preheat oven to 350 degrees. Grease two large muffin tins. Mix 2 egg whites, splenda, and baking powder. Fold in crispy cereal and wildberry yogurt mix. Pour in water and mix. Divide batter into two muffin tins, sprinkle with cinnamon if desired. Bake 10 - 12 minutes or until toothpick comes out clean. (Tip: pour a little water in the empty muffin tins; it helps the muffins bake evenly)

    1 muffin = 1 IP packet

    I love these and have made them every week so far!
