Happy 4th ladies! My FBS was 122 today My weight was also up. We ate dinner at Golden Corral last night and I stuck to low carb items for the meal but had a few very small pieces of dessert (like all together they might have equaled 3/4 of a normal size dessert). I meant to test last night but time just got away from me and I was ready to get in bed. I think I've become even more insulin resistant or carb sensitive since changing my diet. That kind of makes me wonder if I did the wrong thing, I don't know. I'm trying to make peace with that I would have either been like this now or later, either way. But I struggle with wondering if I made it worse on myself.

Some of the ladies on my low carb group make it at the beginning of the week and eat on it all week. When I made it Mark ate a serving at dinner, I ate two servings probably then I ate the rest on other days....so all that to say Carol Sue if you like it, it keeps in the fridge....you could make a half recipe also and use the other half of the cauli for something else too. I understand though that hubby is not eating it and that makes it hard to justify. I also do not buy organic foods or grass fed beef. Occasionally Aldi has the grass fed beef and I have bought it like once. They also carry some organic shelf goods that I buy. I don't buy organic as a rule except for Olivia's soy milk. I'm still trying to get her weaned off that. She had stomach issues as a baby and could not drink reg milk. I've tried mixing it but anytime I go more than half and half she stops drinking it.
I finished the Cereal Killers video last night. It was good. Fathead was more entertaining for me but I liked it once I got past the accents! At some point I am going to get back in touch with my old boss to share how I've changed my diet and the effects. He was so on the cutting edge of all this. He actually met and corresponded with so many folks I see in these videos, it's kind of surreal to me now. He emailed with Gary Taubes regularly, for example. I would just love to hear what he has to say now, it's been 2+ yrs since I've gotten to talk science with him. I miss that. He had definitely cut carbs when I knew him but he still ate bread and I don't think he had increased fat. He was kind of in the who,e grains camp at the time. I'm curious if any of that has changed now as more papers are coming out. He co-wrote on so many of them since the test he created was being used in the studies so he was seeing the data before it was ever published.
My cousin is on her way with her son so I guess I better do a little more cleaning. Olivia is literally bouncing off the walls excited....poor Noah, he has no idea what he is in for!
