HomeMade Chicken Soup?

  • Ok I am making home made chicken soup. Home made stock everything.

    Can I have this or no?

    Ingrdents are:

    1 whole skinned cut up chicken
    8 c water
    sea salt
    Ground Cumin, Cardamom, coriander, a smidge of turmeric
    1 large onion quartered
    2 Celery stalks cut into large pieces
    2 large carrots cut into chunks
    Fresh Ginger and Garlic

    Now the veggies will be removed they are in there for flavor only. I can leave out the carrots if need be.
  • You should check out Evepet's website. She's got a recipe for homemade veggie protien soups that have gotten some good reviews. Also check out the recipe threads, Rainbow posted an amazing looking "Golden Goddess" soup that I'm dying to try!

    I make chicken soup frequently in the winter or for a cold

    I use only veggies from the select veggie list & then I include them.

    So, 1 whole chicken (I usually roast it first, easier to remove skin & fat)
    Chicken bone broth (made ahead-of-time...usually from previous chickens I've cooked)
    I actually weigh all the meat so I know how many dinner servings are in there. I figure 5-6 oz cooked = 8 oz raw

    So if there are 20 oz cooked chicken, it is 4 servings.
    Then I add 8 c veggies (2/serving) and then I have 4 full dinner servings of soup! (When I'm sick, I may split that up throughout the day)

    Veggies I've used: celery, leeks, mushrooms, bok choy (no carrots on IP).
  • My coach would say no to the onion. You aren't supposed to cook with them. Try leeks or scallions instead. And definitely no to the carrots. How about turnip or rutebaga? I like to chop greens like spinach and kale in the food processor until they are tiny and slip them into recipes and my family thinks they are herbs.
  • I am going to add in some zucchini, mushrooms. The chicken I just cut up weighed 4.9 lbs (with the bones) so when I remove the meat from the stock I will take it off the bones and weigh so I can calculate how much I have n there

    Oh yeah and 2 boneless skinless breasts too
  • Wow - in what world are carrots and onions not appropriate foods to eat, either on a diet or off a diet??!
  • In the IP world!! Once in maintenance they are perfectly acceptable foods to eat.

    I take out the cooked down veggies, there is nothing left of them at the end of the stock making.

    I would love to add spinach and kale but dh seems to break out when he has these so cant do it
  • I just opened the lid to the pan and the broth looks so heavenly!! And the taste is out of this WORLD!!! This can cure dang near any anything :P
