I had a long day on my feet yesterday, but I managed to get some exercise done in my cardio/weights class. Didn't burn any calories with enthusiasm! Then I came home after the workout and ate pork rinds! My first time! Not something I'm going to have often, but I really wanted something crunchy/salty and they were the only thing that I had in the house that didn't have carbs.
Back at it with the long day today, and again tomorrow. We started cooking for our local Greek festival. We feed thousands of people over the course of three days in early September. This week we're making
spanakopita. My arms were elbow-deep in vats of spinach, feta, and eggs, hand mixing everything. Had a great time chatting with all the older Greek ladies that I've know since I was a little girl. The whole place smelled buttery!
