I will be attending a potluck supper on Saturday and want to know what everyone's favorite hot or cold veggie side dishes are. I want to make sure there will be at least one IP friendly dish there to go with the meat course.

Mashed faux-tatoes (roasted cauliflower & garlic pureed with some salt & pepper). I am addicted to this dish and usually add roasted celery to the mix, but that's my personal preference.

Roasted or grilled veggies. I will be bringing some to a pot luck on Monday!
