Protien Pancake

  • want to trick yourself your eating a carby pancake? Try this!

    2 eggs
    6TBS egg beaters
    1/4 cup low fat ricotta
    1TBS ground flax seeds
    2 Splenda pacts (or less depending on how sweet you want it)

    Using a hand held mixer, mix all ingredients until smooth.
    Cook in a pan over the stove top just like you would a pancake.
    Flip when the bottom is a light brown color. Cook other side and serve.

    It should be the color of a regular pancake when done...light brown and fluffy.
