COOLIO'S Chicken

  • I made the following last night, it was very tasty and I "think" pretty healthy.

    I cut the recipe in half since it was just Angie and myself for dinner, well step-d stopped by for dinner, after work, on her way to a Bible study but she just had the mashed potatoes and veggies since she is vegetarian.

    I also used 4 thighs instead of wings and legs, giving Angie one to take to lunch today.

    Fall off the bone chicken
    Serves 6-8

    4 lbs. chicken wings and drumsticks
    1 tsp. seasoned salt
    1/2 tsp. fresh ground black pepper
    3/4 c. balsamic vinegar
    4 cloves garlic, diced
    1 medium white onion chopped
    1 (4.5 oz) can chopped green chilis
    2 (10-oz) cans condensed cream of chicken soup
    2-3 green bell peppers, chopped

    1) Preheat oven to 400° 2) Place chicken in a large bowl and sprinkle with seasoned salt and pepper. Add balsamic vinegar, garlic and onions and mix thoroughly. Stir in green chilis, soup and bell peppers. Divide chicken and sauce between 2 baking dishes. 3) Bake until chicken is extremely tender and almost falling off the bone (about 50-60 minutes).

  • I put vinegar in my chicken sometimes, the acid helps to break things down to get the marinade in! I put rice wine vinegar in my chicken marinade just last night! (and im stealing this recipe! )
  • Bargoo, the balsamic vinegar seemed to work just fine.
