Egg Nogg cooked from scratch

  • Had an adventure in egg nogg today. I adapted a basic recipe online to low carb it.

    2 C vanilla unsweetened almond milk
    1/4 C equivalent artificial sweetener (I used liquid splenda)
    2 C heavy cream
    6 eggs
    1/4 tsp nutmeg

    whisk eggs, add almond milk and splenda. Heat slowly (recipe said to 160, but I did it until too hot to touch since I don't have a thermometer). Whisk the whole time (or most of it is what I did) to prevent egg lumps.

    Take off burner, add cream, nutmeg, whisk some more.

    Chill and serve.

    Could add a little brandy, I didn't have any to add!
