UnStuffed Peppers

  • 30 minute one pot meal!!

    1 lb ground beef or turkey
    2 bell peppers sliced into strips
    1 large onion sliced into strips
    1 28 oz can diced tomatoes drained, reserve juice
    2 tsp Italian seasoning
    salt & pepper to taste
    2 cups brown rice (I used instant cause I was in a hurry)
    water

    Saute ground meat peppers & onions just until done. Drain meat, (I also rinse my meat in hot water to cut down on fat). Stir in drained tomatoes. Add in enough water to the reserved tomato juice to make 4 cups of liquid. Stir in the rice, salt & pepper, and Italian seasoning. Bring to a boil, reduce heat, cover & simmer for 15 minutes (if using instant brown rice) or until the liquid is absorbed.
    I sprinkle grated parmesan cheese over top after I plate it. It's so easy & yummy!
  • I do this with shredded cabbage. It's one of our favorite quick winter meals.
