See Ya Week One!!!!!!!

  • Well, I just finished week one of IP. It was the hardest week of my life!!!!I was SOO sick for 4ish days but on day 5 I woke up and was finally feeling good. Hello ketosis and GOODBYE 10 LBS!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
    I started with only about 15 lbs to lose so I'm thinking yay for me!!

    I did not start with variety and now sadly the smell of peppers make me sick! But I have added variety..tonight I made cauliflower tortillas and we had( my boyfriend and I) fajitas! Yummy.. I also made dried Kail and it is hard to not have much cause it is so good!!

    I also made it through my first lunch out! I knew it was going to be hard but my boyfriends parents came to town.... It was one of the most challenging things I have gone through. I never knew how much we don't think about what we order until we actually have to watch what we eat. I have a salad and though it wasn't what I wanted it did... SELF CONTROL..kuddos to me..

    The start to week two begins, I'm not expecting NEARLY as much weight as this last week but I'm hoping for at least one!!! Bring it week two.

    Can you please share your cauliflower tortilla recipe? We eat tons of Mexican and I miss my corn tortillas.
  • I got the recipe from my mom, who makes cauliflower tortillas, cauliflower mashed 'potatoes', and cauliflower rice!!!
    Anyways its simple:


    Makes 2 tortillas

    200 gm raw cauliflower(two cups) put through a food processor until rice sized.

    cook in microwave on vegetable setting or about 2 min.

    Add 1/3 cup 100% egg whites, about 1/4 cup or less veggie cheese, 1/4 tsp sea salt, 1/4 tsp garlic powder, 1 tsp parsely----OR spice to taste experiment!

    Mix well and then split in half, scoop into baking sheet lined with parchment paper. Spread into a circle about 1/2 inch deep. Bake at 425 for about 30 min. Keep watch when edges turn brown tortilla is done. Pull off parchment paper and cool.

    They weren't tortillas but they added a "bread" type to the veggies..And they are good to have as your veggie!!

  • Honestly not sure exactly what makes it but you can find it in the fresh veggie section fridge in the grocery store. They come in shreds and in slices. Takes like cheese but it isn't!! It is an organic things which I usually don't like but it is yummy... Adds a few extra calories(not a ton) so that is the only thing to watch cause it is addicting!

    I have not been doing the IP packets so I've been sub. my foods. Anyways, my mom has been on phase 1 for 6 months and has used it since she started. She is almost done!!! She said veggie cheese is perfectly fine on Phase 1...

    My S-I-L is vegetarian and she eats it. I started eating it as I am lactose intolerant. It is actually really good, tastes just like cheese and is considered a protein. I can't say 100% whether it is allowed in phase 1 but I did see a post on here a few weeks ago where someone mentioned they asked their coach and their coach said it was fine.

    In my grocery store it is where the veggie hot dogs and burgers are.
