Low Cal Lemon Bar/Cake??

  • Hey all!
    I've been doing super crappy these last few months... & I'm really hoping today is the day I'm ready to get back at this thing for real...
    The things is, during these last few months of suckiness, I've become nearly addicted to Starbucks lemon loaf- SO delicious- and theres a reason- nearly 500 calories!!
    So I'm in this lemon craving mood- not really for lemon ice cream- cause I'm sure I could get decently low cal lemon sorbet, but more for a cake or bread of some sort- just wondering if any of you have any lemon bar/cake/something of the sort recipe so I can get through this & maintain in my calorie allowance

    It is a Cooking Light recipe, and every time I make it people rave about it. Unfortunately, it is NOT super light. None of Cooking Light's recipes really are, but they are healthier, lighter, delicious versions some of my favorite foods. So, while it is less than 500 calories a slice, it is still nearly 300 calories. More of a special occasion dessert than a snack. But still...if you like lemon, try it the next time a reason for cake arises. Soooo good!
  • I made a lemon meringue concoction the other day that I really loved and it was only 80ish calories for a big serving. Basically, you mix a 4 serving sf lemon gelatin mix and a 4 serving sf lemon pudding mix with 1 c. boiling water. Add 1 c. cold ff milk and stir. Pour into 4 oven-safe ramekins. Beat 2 egg whites until fluffy, add a T. of sugar or powdered sugar (splenda is not a good idea, it would work, but the chemistry is different and the texture would be off- it's worth the few extra calories for sugar). and beat until glossy. Top the lemon mixture with the meringue and broil in oven until meringue starts to brown (just a couple of minutes). Refrigerate until cool. Yum! Like lemon meringue pie without the crust. I'm going to try chocolate, too, with regular knox unflavored gelatin and maybe a little cocoa powder.

  • THESE are so freaking delicious. They're available in most supermarkets, and they're larger-sized soft baked frosted lemon cookies. For 110 calories a piece, if you can eat 1-1 1/2 at a time they're an awesome substitute for those loaf cakes. G'luck!

  • Weight Watchers has an 80 calorie lemon cake that's sort of like a Zinger. I bought a package of them today, and I like them quite a bite. It's the first diet food I've bought since I started, but no where else *does* little lemon cakes like that!
