Cucumber Salsa

  • Cucumber Salsa

    2 medium cucumbers, peeled, seeded and chopped
    2 medium tomatoes, chopped
    1/2 cup chopped green pepper
    1 jalapeno pepper, seeded and chopped
    1 small onion, chopped
    1 garlic clove, minced
    2 Tbs lime juice
    1 tsp minced fresh parsley
    2 tsp minced fresh cilantro
    1/2 tsp dill weed
    1/2 tsp salt

    In a bowl combine the ingredients. Cover and refrigerate for
    1 hour.

    Of course I adapted the recipe I left the pieces a little bigger to serve as a salad. I used one red and one yellow tomato for visual appeal and used more parsley & cilantro. Oh, and the cucumbers were pickling cucumbers fresh from the farm stand so I didn't peel or seed them. It made a perfect side dish for Mexican Stuffed Peppers (no recipe, sorry)
