Quinoa Breakfast Cake

  • SO easy. Makes six servings.

    6 eggs
    3 cups cooked quinoa
    1 cup cooked spinach
    sliced canned mushrooms
    1/2 cup of rf shredded cheese or parmesan cheese
    can add sauteed onions and garlic or any other spice if you wish.

    Oven to 350. Spray a baking pan (9 x 12?) with cooking spray. Mix the eggs and then add all other ingredients to the bowl and mix. Spread in pan and bake until set, about 20-30 mins. You are getting an egg, 1/2 cup quinoa, some cheese and veggies in every serving. I like to have it with avocado on top. Can be served cold or reheated in micro.
