healthy fajitas!

  • just wanted to share this dinner- i made it for the first time today and loved it- fajitas are one of my favourites so i wanted to find a healthier option:
    -substitute chicken or beef for Quorn fajita strips
    -use cooking spray and cook mushroom, pepper, onion and Quorn with 2 tsp fajita spices
    - serve with green salad and 1 wholemeal pitta

    this dinner really filled me up and didnt feel like a low fat version- tasted just as good!
