Cooking for 100 people, need advice

  • How much turkey
    dressing
    gravy
    fruit to buy for fruit salad and coolwhip
    potato casserole
    cranberry sauce
    broccoli and cheese casserole
    Homemade bread
    Pies
    should be prepared for 100 people

  • Whoa! That is a lot, I'm not going to lie, you have your work cut out for you. Here's some tips:
    turkey- figure 1lb per person (not that they will eat a whole pound but this is the rule of thumb to account for bones)
    Gravy- figure 1/2c-1c per person (always good to have extra)
    Fruit for salads- depends what you're using, but you will want to figure approx 1 piece of fruit per person. If you're purchasing larger fruits, figure 1 serving or 1 cup per person
    Pies and breads- figure 1 slice of pie and 1-2 pieces bread per person
    For casseroles, do you have recipes? Then you can figure out multiples of what you will need.

    When I do any catering, I use those big aluminum pans that you can get from restaurant stores or some grocery stores. They hold a lot of food and are easy to transport. For example with the casseroles you could figure that one of the sheet pans will prob feed 30 or so people (holds 30+ servings) so you'll need 3 pans worth.

    Looks like you have a lot of friends and family, (I'm not surprised). I used to work at a Boy Scout camp. I managed the Kitchen, and what we did was look at the serving sizes for each food item we were preparing. It is printed on the back of all foods. (although I just looked at my turkey and it says "servings per container: Varied) But most food items will have the servings per container on them.

    Most of all my advise it to have fun, and don't take it too seriously if you mess up a little.
  • Thanks for the advice . My husband and the Community house is putting on a supper for the community Dec.3rd and then my husband or fixing supper for our customers at the end of Jan. I found a great site for recipes for 100 people.

  • Yikes! You're a brave soul!

    The only hint I have for cooking for lots of people, is if you are doing baked potatoes, scrub them in your dishwasher.

    Run one cycle with no soap and a little vinegar to clean the DW, put in your taters and run a whole cycle. DO NOT ADD SOAP. They are usually at least partially cooked when the DW is done.
