Another recipe I stole from Favorite Brand Name Recipes - Low Carb Cookbook
2 pounds beef flank steak
1/4 cup packed brown sugar
3 tbsp orange juice
3 tbsp lime juice
3 cloves garlic, minced
1 piece (1-1/2x 1 inch) fresh ginger, minced
2 tsp grated orange peel
2 tsp grated lime peel
1 tsp salt
1 tsp black pepper (YES 1 teaspoon!!!)
1/4 tsp ground cinnamon
1/8 tsp ground cloves
Shredded orange peel
Shredded lime peel
Score both sides of beef by cutting 1/4 inch deep diagonal lines about 1 inch apart in surface of steak to form diamond shaped pattern.
Combine rest of ingredients except shredded peel in Zip-Lock bag and add steak. Marinate in fridge at least 2 hours.
Remove beef from marinade and discard marinade. Grill beef over medium hot coals about 6 minutes per side for medium rare. Garnish with shreeded orange and lime peels.
Cut thin slices across grain of meat to serve.
Makes 6 servings (unless you're me and then it's maybe 3 servings)
