Good Baking Books?

  • I was wondering if anybody knows any good baking books,
    not so much recipes, but what different ingredients do, the equipment, mixing methods, baking methods, what disguishes a cookie from cake or a brownie from a cake, etc.
    Online sites about this stuff is good too, or if anybody here can help too- it's all appreciated

  • The review seems like what I'm looking for, but one solely for baking,
    I don't want to get a book where most of it is about things I won't use,
    maybe the author wrote another book for that...I'll go check
  • I was going to recommend Ratio by Michael Ruhlman, but it's also more generally focused. The first chapter would serve your purpose, though...it's all focused on various doughs.
