Rainbow Raita

  • I had a container of Chobani yogurt that I just didn't like plain. I used double vegetables to make a salad. It's a perfect snack on a warm afternoon. Next time I'll try dill instead of mint.

    * 1 cup low-fat plain yogurt
    * 2 medium carrots, grated (3/4 cup)
    * 1/2 red onion, finely diced (1/2 cup)
    * 1/4 cup chopped fresh mint

  • My family is indian and we make raita with cucumbers, tomatoes, and onions. Raitas are a great cool summer meal!
