Low cal whole wheat Banana Bread

  • 1 1/2 cups whole wheat pastry flour

    1 cup oats

    1 tsp cinnamon

    1/2 tsp baking powder

    3/4 tsp baking soda

    1/4 tsp salt

    1/2 cup firmly packed brown sugar

    2 tbs canola oil

    1/2 cup low-fat buttermilk

    1 large egg, lightly beaten

    1 tsp vanilla extract

    3 medium very ripe bananas, mashed
    Preparation:
    Preheat oven to 350 degrees.

    Combine flour, oats, cinnamon, baking soda, baking powder salt and sugar in a large mixing bowl.

    Add oil, buttermilk, egg and vanilla, then fold in mashed banana.

    Empty batter in to an 8 1/2 inch x 4 1/2 inch loaf tin sprayed with nonstick cooking spray and bake for 50 minutes to an 1 hour.

    Makes 12 slices

    I tried this recipe last night and I was really pleased with it. I'm sure you could replace the oil with applesauce, I didn't have any on hand so I couldn't try it. I also only baked for about 45 min, but that may just be my oven though.

    It is fairly high cal for one slice, but it may work into some plans. I personally can't force myself to eat a large breakfast, but I do try to eat something so I'm not starving by lunch. A slice of this and an orange fills me up.
  • I bet that would be good in mini muffin pans for better portion control, and with some dark chocolate grated into it. Mmmmmm I love banana bread.
