Last Saturday, hubby and I were thinking about what to do for supper. We were contemplating different restaurants and wondering where and what we could eat to stay OP. I ended up saying forget this, and went to the grocery store, and grilled some sockeye salmon, steamed fresh sugar snap peas and a baked potato. It was a beautiful supper, yummy and healthy to boot!

I get SUCH a sense of accomplishment and satisfaction, knowing that I've created this scrumptious, decadent, yet totally health fare for myself and my family. I've been doing this almost three years now, and I still am so amazed at just what great food I'm eating.
