mashed cauliflower

  • I'm sure there is a post somewhere on here, but does anyone have any good recipies for mashed cauliflower. I've heard of people making it, but not sure what they use. Any help would be great!
  • there's a recipe in the South Beach Diet book.

    Ingredients
    * 2 cups cauliflower florets
    * 1/2 ounce I Can't Believe It's Not Butter
    * 1/2 ounce fat-free half-and-half
    * 1 pinch salt
    * 1 pinch fresh ground black pepper

    Directions
    1. Steam or microwave the cauliflower until soft. Puree in a food processor, adding the butter spray and the half-and-half to taste. Season with salt and pepper.

    I tried the first one when I tried the SBD and it was pretty good! Way less calories and good way to get in your cruciferous veggies! I think I'll have to put that on the list and make some later this week!
  • If you have a handheld blender, that is what I'd use to make them. When I made them once, I just tried mashing by hand and they were a bit gross because of the lumps.

  • let me know what you think of them - I'm on South Beach, and while they tasted yummy like cauliflower, I definitely didn't buy into thinking that "they're just like mashed potatoes!!:. Plus I had a little snafoo with the blender and they sprayed all over.. haha! good luck!
  • I made the one from the South Beach Diet one tonight. It was really good, but will take time to get used to the texture of the cauliflower. I think that my taste buds wanted more of a mashed potatoe texture. It was good, but will have to get used to it
