Creamy cottage cheese jello mold/whip

  • I couldn't really come up with a great title for this one, but I was inspired to streamline the cottage cheese/jello mixture I usually eat for snacks. Normally I just take 1/2c cottage cheese and mix it up with a serving of sugar free jello so that it's kinda like a chunky salad.

    Today, I wanted it all creamed together so here's what I did:

    I took:
    1 cup 1% cottage cheese (I used no-salt added)
    1 cup boiling water
    1 small box SF jello mix (I used raspberry today)

    I mixed the 1 cup of boiling water with the SF jello mix until all of the jello was dissolved. Then I put it in a blender with the cottage cheese and whirred it until it was smooth. I poured it into a tupperware container and let it set in the fridge, about 4 hours.

    Ohmygod it was so good! And you can eat 1/2 of the batch for 100-110 calories (the offbrand jello I use is 5 cals a serving, but brand name is 10). It was like a creamy jello mold, only chock full o' protein. I'm glad I figured this out because otherwise I can't eat the no salt added cottage cheese because it's just too bland... haha.
  • Lindsey, here's a little tweak that makes it taste like cheesecake.

    Lemon or Lime Cheesecake

    2 boxes of lemon or lime sugar free Jell-O (I’ve also used cherry and strawberry)
    1 3/4 cups of boiling water
    2 cups cottage cheese (I use a 24 oz container of Light & Lively)
    2 tablespoons of sugar free cheesecake pudding mix (about ½ packet)

    I use a 4 cup glass measuring cup for the first step.

    Boil water. Dissolve Jell-O into boiling water. Add ice to make about 3 ½ cups of liquid.

    Pour mixture into a blender container. Add cottage cheese and pudding mix. Blend until mixture is completely smooth. Pour into individual dishes and refrigerate until set.



    Either way, it's SO good and satisfying! Thanks for reminding me about it -- I'm going to make some tomorrow.
