Stuffed French Toast w/ Peanut butter & Bananas

  • Oooh! I just had a yummy thing had to share with you all!

    I took 2 slices of whole wheat bread and spread each side thinly with natural peanut butter ( a safe one...I promise!)
    then I sliced up a banana (longwise) and put in in between the slices of bread. I put it all together and dipped it in Egg Beaters and cooked it in a pan sprayed with Pam. I topped it off with sugar-free syrup and voila!

    So good & so satisfying!

    Does anyone else stuff their french toast with healthy items???

  • I don't make french toast, but I do add mushrooms, spinach and candian bacon to my waffle batter. I like savory stuff instead of sweet

  • I make french toast stuffed with guava jelly and mixture of non-fat cream cheese and goat cheese. The sweetness of the jelly compliments the cheese. If you don't have guava jelly (we have a guava tree and there's not much to do with the guavas except make jelly) you could use any kind of jelly you like. With the jelly, I find that it doesn't need any syrup.

    Well, it is true that I love fat free cream cheese, so I might not be reliable on this. But goat cheese is generally so strong in flavor that when you mix it with the fat free cream cheese, you mostly taste the goat cheese. I'm mixing the goat cheese with the cream cheese to cut the calories a bit--you could use all goat cheese (maybe try using a smaller amount) or you could mix the goat cheese with reduced fat cream cheese or whipped cream cheese instead. You could even try mixing it with plain yogurt or cottage cheese. It's a pretty flexible recipe.
