any one have a healthy low cal recipe for fried chicken?

  • last thread I made about a cheese burger gave me so many great I deas! and I tried quite a few of them!


    my new craving! fried chicken like form KFC or the chicken they make in the delis at the grocery stores like safeway and fred myers.. mmm it smells so good!.... I'm sure I could get one of there little snackers to satisfy my craving. or even one or two chicken strips but just wondering if any of you had any other options?
  • I'm pretty fond of the Weight Watcher's Fried Chicken recipe...the cornflakes make a really, really good crunch, and the buttermilk makes it really moist. I usually add a bit of paprika into the seasonings.

  • I'm sorry I can't offer you a healthy tips on the fried chicken, but I have a question.... How can fried chicken, cook any way, be healthy? doesn't frying it automatically make it laden with fat & oil & therefore unhealthy?
  • This ww recipe looks good. I make something similar, except I coat the chicken in dijon mustard, then roll it in whole wheat panko bread crumbs. I think I'll try using the buttermilk for a change. Thanks for the link.
  • Extrasee - well, no, on several counts. First, this is really "oven-fried" chicken, so it is baked.

    But regardless, food that is PROPERLY fried actually takes up a teaspoon of oil or less, IF it is fried at the correct temperature. It only gets oil-laden if you let the temperature of the oil drop too much...then your breading mixture soaks up the oil and you end up with extra calories.
  • I agree with madalinn- I've heard of healthy versions of fried chicken before but couldn't find any recipes... I've used baking as an alternitave to frying regualrly I even foudn a way to make low calorie eggs rolls by spraying them with pam and baking them and using ground turkey instead of pork or beef.. same with my taquito's I use to fry them now i spray the tortilla with a little pam and oven bake it.. the great thing abotu calorie counting is nothing is truly off limits!
  • I marinate chicken in low fat ranch dressing (homemade or low-fat Hidden Valley Ranch), then roll in seasoned crumbs and place on a cooking sprayed pan, I also lightly spray the tops of the chicken pieces and bake at 350).

    For the crumbs, I've used several coatings - bread crumbs, cracker crumbs or fiber one or other high fiber cereals (crushed in the food processor) or even mashed potato flakes. I season with salt (or chicken soup base powdered bouillon) and pepper and garlic powder.

  • i guess the only way you could get it healthy is to fry it in the skin then take the skin off. that way most of the oil is taken away. apart from that i agree with extrasee nothing fried can be low cal even if it is oven backed its been i assume part fried in order for them to call it fried
  • I think the "fried" in oven fried is used to mean "Crispy coated".
  • yeah I meant "fried like" basically a breaded like coated piece of chicken..lol
  • I dip mine in skim milk then coat in whole wheat flour or (grind oats to make oat flour) and some poultry seasoning then fry in grape seed oil or coconut oil. I make Chicken fingers this way.

    just another related question.. do you use chicken on the bone for this recipe? I am no fan of cutting a bird. At costco I can get a good sized chicken for 3.99 ish. But then I have to cut it up. And I'm no good at that.

    I can by it cut up into pieces at a regular supermarket and then it gets pricey. And breasts are kinda pricey too. So I've been doing boneless skinless thighs in the crock pot. They are really tasty but I'd like a change.. (and my 7yo asked me to expand my recipe horizon a bit....)

    any thoughts appreciated...
