  • Green Beans are the Veggie of the Week!!!

    Green beans, while quite low in calories (just 43.75 calories in a whole cup), are loaded with enough nutrients to not only power up the Jolly Green Giant, but to put a big smile on his face. Green beans are an excellent source of vitamin C, vitamin K and manganese. Plus green beans are very good source of vitamin A (notably through their concentration of carotenoids including beta-carotene), dietary fiber, potassium, folate, and iron. And, green beans are a good source of magnesium, thiamin, riboflavin, copper, calcium, phosphorus, protein, omega-3 fatty acids and niacin.

  • I'm boring. I like them lightly steamed, and then sauteed for a few minutes in olive oil and chopped garlic. Before serving, sprinkle with salt, pepper and fresh lemon juice.

    I also like to eat them raw.
  • Belle mer...you're boring??? NO way!! I usually just get the low sodium ones in the can and add some salt,pepper and butter when they're cooking on the stove. But my favorite is getting the Glory Green Beans. (Yeah, i don't do alot of "home cooking").

    Well, my favorite way to make them is to saute them in bacon grease....but that is what got me here in the first place

    Now, I steam them and then saute them in garlic and shallots. When they are done, a little sprinkle of kosher salt and fresh pepper. That is DH's favorite way as well.

    I also REALLY like the SBD green bean casserole.

    Oh man. I just got home from the grocery store...DH is going to kill me if I send him back for green beans.

    I have never purchased canned green beans in my life, ugh. I buy the frozen ones to give my puppy as a treat and to add to a quick soup.
  • Belle - I use frozen in soups as well, especially minestrone....but for some reason they taste different than fresh. I can't quite put my finger on why they taste different, or even how...but they just don't taste as good.

    Frozen brussels sprouts on the other hand...mmm...I eat them slightly thawed and cold....along with frozen corn.

    I'm a freak like that.
  • Green beans! Mmmmmmm! My favorite way to eat them is to roast them in the oven with a light drizzle of olive oil. I cook them until they're starting to get crispy. Mmmmmmmm! Another way I like them is to microwave them until they're tender-crisp, then drizzle a good marinara sauce over them and a sprinkle of locatelli cheese.
  • MMMM! green beans....any which way i can get them. fresh frozen canned....what-ev! i like to steam with sea salt and spray butter, i like to saute with evoo, seas salt, pepper sometimes garlic. i like to boil with turkey bacon and sea salt and pepper. oven roasted with onions garlic evoo and balsamic vinegar. i gotta go check out the casserole recipe!
  • I have a garlic mustard green bean recipe that I like to use. Easy and good. I'm not sure if it is posted here. I either got it here or another South Beach board.
  • I'm gross, cause I will eat the **** out of canned green beans. I don't care if they're not hot, I'll eat them out of the can with my fingers, like a starving beast (which obviously I'm not, or I wouldn't be trying to lose weight!) I also like the canned "french style" string beans.

    Once I've eaten some like that, I generally throw them into a microwaveable bowl and heat them. I like to garlic 'em up, then again, I love to add garlic to everything. So far I haven't noticed anyone complaining that I stink of garlic, so that's good.

    I like the green beans in stir frys, nice and crisp and delicious. They taste a lot better than canned green beans, I admit. But real fresh ones? I haven't had those since, oh... I was a kid, and we a had a garden! I ate very healthfully growing up. Yum!
  • I love green beans, got some steamfresh frozen ones just today so I have a veggie to eat, cause some veggies I don't eat.. made sure nothing was added to them either.
  • I usually steam a whole big bunch and I love to throw the leftovers in a salad the next day.
  • I'm having fun reading this one. I don't do much with green beans - they are either eaten raw as crunchy snacks or steamed lightly for bean salads. I'll have to check out some of the other recipes!
  • I like the frozen hericot vert. Love to smother them down with turkey bacon, onions, creole seasoning and chicken stock.

    Another way is to "bundle" them with a slice of water chestnut and wrap the little bundle with turkey bacon, sprinkle with creole seasoning and bake for a while. yum.
  • Cat - The bundles sound FANTASTIC!!!

    I like to sautee a some onions & mushrooms, then I add in the green beans, pour some chicken broth into the pan and then cover and steam for 5 min. They turn out great every time.

    I also like to steam them slightly, then dip in a mayo soy dip. It's a family faovrite.

    And I've got a REALLY BAD (can you say serious food porn) recipe that's a take on the traditional green bean casserole that we do at Thanksgiving. But I won't post it unless someone really wants to know.
