I have about 8 baby eggplants... any good recipe ideas? I'm thinking ratatouille but wondering if anyone else has any suggestions...

My hubby loves eggplant! We usually steam them and put soy sauce on.

I've cooked eggplant with other veggies and some lean ground beef. I just cubed teh eggplant, added onions, garlic, peppers, adn then added the cooked/drained beef. It was good.
