So what can I do with these carrots?

  • I'd like the carrot soup recipe if you don't mind sharing.
  • OK, you'll have to forgive me, because this is from memory AND we use the metric system here, but you'll probably get the idea

    Start off with about 1½ litre of water bring it to a boil
    add 2 - 3 veggie bullion cubes (1 think what we have here = 1 cube per 500ml)
    You need 500 g of carrots (that's a pound)
    clean those up and chop them in about 10cm chunks (around 1 inch)
    put them in the boiling bullion about 20 minutes
    What I add is:
    chopped fresh garlic
    chopped fresh ginger
    black pepper
    about 1 TBSP curry powder
    Red chili powder of your choice

    All those go in while the carrots are cooking.

    After the 20 minutes, take the soup off the heat, let cool for just a few minutes.

    Use your blender to blend all the chunks and make a smooth soup.

    Serve with a spoonful of LF or FF sour cream / creme fraiche (optional) and garnish that with freshly chopped cilantro.

    The spices are really to taste - I love spicy stuff and the taste of fresh ginger so I tend to add more than the average bear would

  • Carrot Bisque is reeeeeaaalllllyyyyy good. You can even add a sweet potato and a little ginger to make it really delicious and thicker.
  • I know it's way too late for your carrots, but I have another idea.

    I shred bunches of carrots at at time. Then, I put them somewhat loosely into ice cube trays, fill the gaps with water and freeze. Later, I pop out the carrot cubes and put them in a Ziploc bag. Now, they're available for use in carrot cake, soups, pasta sauces, etc. They will stain your ice cube trays, but I have a set I use just for such things that are good and orange now!
