    1 pound fresh asparagus
    8 lettuce leaves
    1/4 cup lemon juice
    3 tablespoons fat-free raspberry vinaigrette
    1/4 cup blue cheese

    1. Snap tough ends off 1 pound fresh asparagus. Steam asparagus 4
    minutes. Plunge into ice water; drain. Arrange 2 lettuce leaves on each of
    four salad plates; top with asparagus. Combine 1/4 cup lemon juice and 3
    tablespoons fat-free raspberry vinaigrette; drizzle over salads. Sprinkle
    evenly with 1/4 cup blue cheese. Yield: 4 servings.
